<p>Serves: 8</p>
<h3>Ingredients</h3>
<ul>
<li>1 clove garlic, minced</li>
<li>1 onion, chopped</li>
<li>2 tsps coconut oil</li>
<li>2 cups skim milk (or soy milk)</li>
<li>1 cup low-sodium chicken broth</li>
<li>2 tbps all-purpose flour</li>
<li>1/4 tsp black pepper</li>
<li>1/2 cup grated Parmesan cheese</li>
<li>16 oz whole-wheat fettuccine pasta (use <a href="http://www.low-caloriediet.com/lunch-dinners/calorie-wheatfree-pastaslim">Pasta-Slim</a> to save even more calories)</li>
<li>16 oz bag frozen broccoli florets</li>
</ul>
<h3>Directions</h3>
<ol start="1">
<li>Heat oil in a large saucepan over medium heat.</li>
<li>Throw in garlic and onion and sauté until golden brown.</li>
<li>In a separate small saucepan mix in milk, broth, flour and pepper over low heat until it thickens. Add to onion and garlic mixture. Cook over low heat and stir regularly until the sauce is thick. Add Parmesan cheese.</li>
<li>Boil pasta and add broccoli florets to pasta the last few minutes.</li>
<li>Once pasta is thoroughly cooked transfer to a large bowl and add sauce.  Mix well and enjoy!</li>

<p><strong>Ingredients</strong><br />
4 tablespoons grape seed oil<br />
½ cup orange juice, fresh squeezed<br />
1 tsp tarragon<br />
1 tsp Dijon mustard<br />
1 tsp honey<br />
12 cups lettuce, chopped<br />
8 ounces wild Alaskan Salmon filets, cooked<br />
8 tablespoons goat cheese, crumbled<br />
2 medium oranges, sectioned</p>

<p><strong>Ingredients</strong><br />
1/2 cup coarse dry whole wheat breadcrumbs<br />
1 tbsp extra-virgin olive oil<br />
1 tbsp whole-grain mustard<br />
1 tbsp chopped shallot<br />
1 tbsp lemon juice<br />
1 tsp chopped rinsed capers<br />
1 tsp chopped fresh thyme or 1/2 teaspoon dried<br />
1 1/4 pounds center-cut salmon fillet, skinned and cut lengthwise into 4 strips<br />
4 tsp low-fat mayonnaise</p>
<p><strong>Prep</strong><br />
1. Preheat oven to 400°F and coat at least a 9x13inch baking dish with cooking spray.<br />
2. Mix breadcrumbs, oil, mustard, shallot, lemon juice, capers and thyme in a small bowl.<br />
3. One strip at a time, spread 1 teaspoon mayonnaise on a salmon strip. Spread about 3 tablespoons of the breadcrumb mixture over the mayonnaise. Starting at one end, roll the salmon up tightly, tucking in any loose filling as you go. Insert a toothpick though the end to keep the pinwheel from unrolling. Place in the prepared dish. Repeat with the remaining salmon strips.<br />
4. Bake the pinwheels until just cooked through, 15 to 20 minutes. Remove the toothpicks before serving.</p>

<p>4 boneless, skinless chicken breasts trimmed<br />
1/2 cup pecan pieces<br />
1/4 cup plain dry breadcrumbs<br />
1 1/2 tsp freshly grated orange zest<br />
1/4 tsp ground chipotle pepper (see Note)<br />
1 large egg white<br />
2 tbsp water<br />
1 tbsp olive oil, divided</p>
<p><strong>Prep</strong></p>
<p>1. Place chicken between sheets of plastic wrap and pound with a meat mallet or heavy skillet until flattened to an even 1/4-inch thickness.</p>
<p>2. Place pecans, breadcrumbs, orange zest, ground chipotle in a blender and pulse until the pecans are finely ground. Transfer the mixture to a shallow dish. Whisk egg white and water in a shallow dish until combined. Dip each chicken breast in the egg-white mixture, then coat both sides in the pecan mixture.</p>
<p>3. Heat 1 1/2 teaspoons olive oil in a large skillet over medium heat. Add half the chicken and cook until browned on the outside and no longer pink in the middle. Transfer to a plate and cover to keep warm. Wipe out the pan with a paper towel and add the remaining oil. Cook the remaining chicken, adjusting the heat as needed to prevent scorching.</p>

2 cups mung bean sprouts<br />
1 bunch scallions, sliced<br />
1 tbsp reduced-sodium soy sauce<br />
1 tbsp rice vinegar<br />
2 tbsp hoisin sauce</p>
<p><strong>1.</strong> In large pan heat 1 tsp of oil. Add eggs; cook, stir until set, approximately 2 to 3 minutes. Remove from pan.<br />
<strong>2.</strong> In same pan heat the remaining 2 teaspoons oil over medium heat. Add ginger and garlic, stir until softened, approximately 1 minute. Add shredded vegetables, bean sprouts, half the sliced scallions, soy sauce and vinegar. Stir. Cover and cook for approximately 3 minutes. Add the cooked eggs, hoisin and the remaining scallions, stir for 2 minutes.  Remove and enjoy!</p>
