A tasty, high protein salad that’s low in calories!
Ingredients:
4 ounces skinned smoked trout fillet, flaked
1/4 cup minced celery
2 tbsp low-fat mayonnaise
2 tbsp reduced-fat sour cream
1 tsp minced freshly grated lemon zest
2 tbsp lemon juice
1 tbsp minced fresh dill or 1 teaspoon dried
1/2 tsp freshly ground pepper
2 cups mixed salad greens
1 med tomato, sliced
Prep:
In a medium bowl combine trout, celery, sour cream, mayonnaise, lemon zest, lemon juice, dill and pepper. Place salad greens and tomato on 2 plates (or bowls) and top with the trout salad mixture.
